Antica Focacceria di Bagheria is a family-run Pizzeria opened since 1856 that has seen seven generations of the Chiello family at work.
Today, at Piazza San Sepolcro, it still offers focaccia with fresh and salted ricotta, lard and black pepper. Hot, crunchy, freshly baked. A timeless street-food. The sfincione di Bagheria also comes to life from this candid imagery, soft with ricotta, tuma cheese, onions, toasted breadcrumbs and a scent of oil and anchovies to fill the nose and the square. Since 2010 - on this date the management passed from Ignazio to the extended family, in detail to Giuseppe Urso, Ignazio's brother-in-law, and to his cousins, Cico and Michele Carollo - pizza and a modern room have been added to welcome customers. The oven is the same as always, fueled with artisan wood and set in the room, a jewel preserved since 1901 that works at 400 ° C.
Focaccia & Pizza
From the menu, we recommend starting with a trio of tastings: focaccia with ricotta, sfincione and fried montanarina. They are variations on the ricotta theme, in different textures and tastes, which make us understand the influence of tradition. The focaccia is delicate, you can feel the contribution of the wood oven and the creaminess of the seasoned ricotta. The sfincione in the starter version is seductive, with a convincing character, the sweet taste of the onion and the flavor of the anchovies are a confirmation of the balance of this product. Also good is the montanarina, fried but dry, dressed in white, red and green, with ricotta, raw datterino tomatoes and a touch of basil pesto placed on top. On the pizza front, the Truscia, with rocket pesto instead of tomato, delicately bitter and herbaceous, stewed red pumpkin, stracciatella and black Nebrodi pork bacon added at the oven. The pizza is well cooked and homogeneous, with a fragrant and honeycomb rim.
