The CATAR application will allow assessing the acceptability of three formulations of vegetable shakes with a view to promoting the consumption of fruit and vegetables in university students.
For this, a C.A.T.A. questionnaire will be used. (Check All That Apply) and a test that uses a 9-point hedonic scale.
The C.A.T.A method consists of making a consensual list of sensory attributes or other characteristics that are interesting to assess in a particular product, in this case, shakes. This list is exposed to consumers, along with each of the samples, to mark which of the attributes or characteristics describe them.
In this sense, smoothies are presented as attractive products that encourage greater consumption of fruits and vegetables. They consist of preparations based on fruits or vegetables (generally more than one) fresh or frozen with 100% of their edible portion, undiluted, crushed, homogenized and with a mild heat treatment to extend their shelf life, or without heat treatment to consumption in the day. In the Argentine market, although there is a limited supply, they are offered packaged in glass containers or in transparent plastic pouches specially designed to drink directly and are stored refrigerated. In addition, this type of product allows the incorporation of other components in its formulations such as: oats, chia, honey, quinoa, among others, which contribute to increasing satiety, improving its healthy potential and nutritional value by providing minerals, fibers, vitamins and bioactive compounds (phenolic compounds, carotenoids and vitamins C and E).
