We make our pizza using our own dough.
The first and most important feature of Roman pizza is its crispy dough.

The entire process from sourdough to baking parbake (baked base until half cooked) takes almost a day. That is why the process of preparing dough takes place in our kitchen every day. So, the cook puts in the starter, and a day later he kneads the dough using this starter. After which the dough needs to stand for a while, and the next step is to roll it into balls, which in turn should also be spaced. Then the dough is sent to the oven and baked until 70% done. After all this, the parbake, baked until half cooked, is wrapped in cling film and sent to the freezer. Thanks to all these simple movements, you end up with a crispy Roman pizza made from our signature dough.
