Created in 2018 by the Young Economic Chamber of Rodez in partnership with renowned pastry chefs and restaurateurs, this dessert to be shared with family or friends has made a remarkable entry into the culinary heritage of Ruthenian and more widely from Aveyron.
Made with apples, caramelized hazelnuts and chestnut cream, Mandarelle is a delight for the taste buds and it is also beautiful to contemplate since it represents the rosette of Rodez cathedral.
